Many distilleries also rely on natural wild yeast from the local environment, which creates more fruity compounds (called esters) and makes the rum smell stronger and more aromatic.

Another key tradition is adding “dunder,” which is leftover material from earlier distillations, into the fermentation. This may not sound glamorous, but it’s a classic technique that gives the rum even more depth, richness, and character.

Staying true to the real thing is one of the most important principles in Jamaican rum making. Local laws do not allow artificial additives, so what you taste in the glass is the rum’s natural character, not something “fixed” later. The rum is also made with water that has been filtered through limestone, which gently shapes its distinctive taste.
